材料
大蝦 5隻
鹹蛋黃 3個
蒜蓉 2湯匙
牛油 30克
生粉 4湯匙
鹽 1/2茶匙
糖 1/2茶匙
胡椒粉 1茶匙
油 150毫升
紹興酒 1湯匙
葱粒 1茶匙
做法
- 將蝦洗淨去蝦腸抹乾
- 用1/2茶匙鹽,1茶匙胡椒粉,1湯匙紹興酒醃15分鐘
- 取出抹乾撲上生粉,落滾油炸至8成熟取出備用
- 鹹蛋黃隔水蒸3分鐘至軟身打碎
- 起鑊落牛油,蒜蓉,鹹蛋黃,1/2茶匙糖
- 再落大蝦,略炒
- 最後放上葱粒便成
Ingredients
5 King Shrimps
3 Salted Egg Yolk
2 tbsp Garlic
30g Butter
4 tbsp Corn Flour
1/2 tsp Salt
1/2 tsp Sugar
1 tsp Pepper
150ml Oil
1 tbsp Shaoxing Wine
1 tsp Shallot
Steps
- Wash and devein the shrimps
- Marinate the shrimps with 1/2 tsp of salt, 1 tsp of pepper and 1 tbsp of Shaoxing wine for 15 minutes
- Take out the shrimps and pour the corn flour, and fry for almost well done
- Steam the salted egg yolk for 3 minutes to soften it
- Heat the frying pan and add butter, garlic, salted egg yolk, 1/2 tsp of sugar
- Add the shrimps then stir well
- Topping with shallot
