茄汁蝦碌食譜 Shrimp in Tomato Sauce Recipe

材料

大蝦 5隻
洋蔥 1/2個
紅蔥頭 2湯匙
蒜頭 2湯匙
生粉 4湯匙
鹽 1茶匙
胡椒粉 1茶匙
紹興酒 1湯匙
茄汁 2湯匙
茄膏 1湯匙
喼汁 1/2茶匙
糖 2茶匙
油 150毫升做法

  1. 將蝦洗淨去蝦腸抹乾
  2. 用1/2茶匙鹽,1茶匙胡椒粉,1湯匙紹興酒醃15分鐘
  3. 取出抹乾撲上生粉,落滾油炸至8成熟取出備用
  4. 洋蔥切條,起鑊,落一湯匙油,略炒取出
  5. 再放1湯匙油,落紅蔥頭,蒜蓉,茄汁,茄膏,喼汁,糖,1/2茶匙鹽,炒均
  6. 再放蝦及洋蔥略炒便成

2 tbsp Red Onion
2 tbsp Garlic
4 tbsp Corn Flour
1 tsp Salt
1 tsp Pepper
1 tbsp Shaoxing Wine
2 tbsp Tomato Sauce
1 tbsp Tomato Paste
1/2 tsp Worcestershire Sauce
2 tsp Sugar
150ml OilSteps

  1. Wash and devein the shrimps
  2. Marinate the shrimps with 1/2 tsp of salt, 1 tsp of pepper and 1 tbsp of Shaoxing wine for 15 minutes
  3. Take out the shrimps and pour the corn flour, and fry for almost well done
  4. Cut the onion, heat the pan and add a tablespoon of oil, stir fry
  5. Add 1 tbsp of oil, red onion, garlic, tomato sauce, tomato paste, worcestershire sauce, sugar, stir-fry, then add the shrimps and onion
  6. Topping with shallot
